Honey Pecan Turkey Mignon
Prep: 10 min, Cook: 30 min, plus cooling time.
- 1 cup honey
- 1 cup dark brown sugar
- 1/4 cup apple cider vinegar
- 1/4 cup bourbon
- 2 Tbs. Worcestershire sauce
- 1 tsp. vanilla
- 2 tsp. garlic powder
- 1 Tbs. salt
- 1 tsp. cayenne pepper
- 1 cup roasted chopped pecans
- 4 turkey mignon
- 1/4 tsp. salt and pepper
- 2 Tbs. butter
In a saucepan, over medium heat, stir together the first nine ingredients, the honey, brown sugar, apple cider vinegar, burbon, Worcestershire sauce, vanilla, garlic powder, salt, and cayenne pepper.
Stir until sugar is totally dissolved and sauce comes to a soft boil.Remove from heat and stir in pecans. Allow sauce to Cool.
For each Turkey Mignon:
Season Turkey Mignon with a sprinkle of salt and pepper. Sear Turkey in a skillet with 1 tbsp butter over moderately high heat until browned on both sides.
Pour 1/3 cup of glaze into skillet with turkey mignon.
Place skillet on a burner until turkey reaches an internal temperature of 160°F, turning once while cooking.
Garnish with a sprig of rosemary.
